What could be more unusual than the combination of beetroot and kasundi.

Ingredients
Beetroot,Boiled, peeled And Grated1 medium
Cooked basmati rice3 cups
Olive oil1 tablespoon
Cumin seeds1 teaspoon
Green chillies,slit3
Onion ,finely chopped1/2 medium
Red chilli powder1/2 teaspoon
Turmeric powdera pinch
Garam masala powder1/2 teaspoon
Kasundi Mustard3 tablespoons
Saltto taste
Fresh mint leaves,finely chopped2 teaspoons
Method
Heat olive oil in a non stick wok. Add cumin seeds, green chillies and saute. When the cumin seeds change colour, add onion and saute lightly.

Add red chilli powder, turmeric powder, garam masala powder, beetroot and saute for 1 minute. Add kasundi and saute for 1 minute. Add cooked rice and mix well and let it get heated through. Add salt and mint leaves and mix. Serve hot.
