Mexican Fried Rice





Full of flavour - rice cooked with coloured peppers and jalapenos.

Ingredients
Basmati rice,boiled3 cups
Oil2 tablespoons
Garlic cloves,finely chopped15
Onions,finely chopped2 medium
Carrots,grated2 medium
Red chilli sauce1 teaspoon
Tomato ketchup2 tablespoons
Red capsicums,finely chopped2 medium
Yellow capsicums,finely chopped2 medium
Jalapenos ,sliced2
Mixed herbs,dried1/2 teaspoon
Saltto taste
Cilantro (fresh coriander leaves)a few
Corn chipsa few
Method
Heat oil in a non stick pan, add garlic and saute till well browned. Add onions and saute till they soften.

Add carrots and saute. Add red chilli sauce, tomato ketchup, red peppers, yellow peppers and mix and saute. Add rice and mix gently. Add jalapenos, mixed herbs, salt, cilantro and mix. Crush con chips and add and mix. Transfer into a serving bowl and serve hot.
