Sweet Corn Crunch Cake A crunchy cake made with sweet corn. Cooking Time:  15-20 minutes Servings:  4   Preparation Time:  10-15 minutes   Category:  Veg    Ingredients • Sweet corn kernels 1 1/2 cups • Refined flour (maida) 60 grams • Cornflour/ corn starch 60 grams • Baking powder 1 teaspoon • Baking soda 1 teaspoon • Butter 1 tablespoon + 1 teaspoon • Condensed milk 2 tablespoons • Buttermilk 1/4 cup • Corn flakes,crushed 1/2 cup • Almonds,sliced 2 tablespoons • Sugar 1 tablespoon • Cherries as required Method Preheat oven to 170°C. Drain the water from the corn kernels and grind to a puree. Sieve refined flour, corn flour, baking soda and baking powder into a bowl. Burnt Corn Salad Mexicans love their food smoky flavoured. This corn salad is a tasty example. Preparaiton Time:  10 min. Cooking Time:  10 min. Serves 4.    Ingredients 1 cup   boiled sweet corn kernels 1   white onion  , sliced 1   capsicum, sliced 1   tomato, sliced 3 tsp   oil salt  to taste To be mixed into a dressing (in a bottle) 2 tbsp   olive oil  or  salad oil 1 tbsp   lemon juice 2  pinches  chilli powder a pinch of  sugar Method Heat 2 teaspoons of oil in a pan until it smokes. Add the corn kernels and go on stirring until they are slightly burnt. Remove. Add the remaining oil and the onion and capsicum and cook for 1 minute. Remove. Mix the corn kernels, onion, capsicum and tomato and salt. Pour the dressing on top. Serve immediately.

Makes 12 cutlets.  Ingredients 1 1/2 cups  cooked instant  noodles 1/2 cup   sweet corn (makai ke dane),  cooked and crushed 2   green chillies, finely chopped 2   spring onions, finely chopped 3 tbsp   tomato ketchup 1/2 cup   grated processed cheese 1/2 cup   bread crumbs salt  to taste black pepper (kalimirch) powder  to taste Other ingredients  bread crumbs  for coating oil Method In a bowl, combine the noodles, sweet corn,green chillies, spring onions, ketchup, cheese, bread crumbs, salt and pepper and mix well using your hands.
