Rice aur Chane ki Tikki   Cooked rice and kale chane mixed with masalas and made into tikkis. Cooking Time:  15-20 minutes Servings:  4   Preparation Time:  15-20 minutes   Category:  Veg Ingredients • Cooked rice 1 1/2 cups • Brown Bengal gram (kala chana),cooked 1 1/2 cups • Ginger,finely chopped 1 tablespoon • Green chillies,finely chopped 2-3 • Cumin powder 1 teaspoon • Red chilli powder 1 teaspoon • Black salt (kala namak) 1/2 teaspoon • Chaat masala 1 teaspoon • Onions,finely chopped 2 medium • Cornflour/ corn starch 3 tablespoons • Oil to deep fry Method Grind together the Bengal gram, rice, ginger, green chillies, cumin powder, red chilli powder, black salt and chaat masala to a coarse mixture. This recipe is a good example of how versatile and delicious the humble potato and sweet potato can be. If you omit the radish in this recipe, you can also eat this dish when "fasting". Chick Pea Salad ( Desi Khana) Colourful and tangy, the chick pea salad has a very peppy accompaniment. Savour the tanginess of tomatoes, green chillies and lemon juice; the wholesomeness of chick peas and potatoes; and the chat-pati hints of black salt and chaat masala, all in one enticing package! Preparation Time:  20 mins Makes 4 servings Ingredients 2 cups   soaked and boiled kabuli chana (chick peas) 1/2 cup  boiled and peeled  potato cubes 3/4 cup  finely  chopped tomatoes 2 tbsp  finely  chopped coriander (dhania) 2 tsp  finely  chopped green chillies 1/2 tsp   black salt (sanchal) 1 tbsp   lemon juice 2 tsp   powdered sugar 2 tsp   chaat masala salt  to taste Method Combine all the ingredients in a deep bowl and mix well. Ingredients Method 3/4 cup   rajma (kidney beans) 1 1/2 cups   steamed rice (chawal)  (use leftovers if you have any) 1/2 tsp   cumin seeds (jeera) 1  small stick of  cinnamon (dalchini) 1/2 cup   sliced onions 1 tbsp  thinly  sliced ginger (adrak) 1 to 2   sliced green chillies 1/4 tsp   turmeric powder (haldi) 1 tbsp   coriander (dhania) powder 1 tbsp   dried mango powder (amchur) 1/2 tsp   black salt (sanchal) 1 tbsp   oil salt  to taste Soak the rajma in water overnight. Drain and discard the water. Keep aside. Heat the oil in a pressure handi. Add the cumin seeds and cinnamon and allow them to crackle. Add the onions and sauté for a few minutes till they are translucent. Add the ginger and green chillies and sauté for a few more minutes.
