Sweet Corn Crunch Cake A crunchy cake made with sweet corn. Cooking Time:  15-20 minutes Servings:  4   Preparation Time:  10-15 minutes   Category:  Veg    Ingredients • Sweet corn kernels 1 1/2 cups • Refined flour (maida) 60 grams • Cornflour/ corn starch 60 grams • Baking powder 1 teaspoon • Baking soda 1 teaspoon • Butter 1 tablespoon + 1 teaspoon • Condensed milk 2 tablespoons • Buttermilk 1/4 cup • Corn flakes,crushed 1/2 cup • Almonds,sliced 2 tablespoons • Sugar 1 tablespoon • Cherries as required Method Preheat oven to 170°C. Drain the water from the corn kernels and grind to a puree. Sieve refined flour, corn flour, baking soda and baking powder into a bowl. Mix 1 tbsp butter and condensed milk in anotherbowl, add the corn puree, flour mixture and continue to mix to make a batter. Add buttermilk to adjust the consistency. Peanut and Corn Bhel  The popular bhel in a different avatar. Cooking Time:  10-15 minutes Servings:  4   Preparation Time:  10-15 minutes   Category:  Veg. Ingredients • Roasted peanuts 4 tablespoons • Corn kernels,boiled 1/2 cup • Onion ,finely chopped 1 medium • Fresh coriander leaves,chopped 1 tablespoon • Green chillies,finely chopped 1/2 teaspoon • Chaat masala 1 1/2 teaspoons • Salt to taste • Lemon juice 2 teaspoons • Corn flakes 1 cup Method Put corn kernels, peanuts, onion, coriander leaves, green chillies, chaat masala, salt and lemon juice in a bowl and mix well. Crush cornflakes coarsely and add and mix well. Serve immediately.

Whole Wheat Corn Flake Rolls ( Delicious Diabetic Recipes) Extremely simple and nourishing - all the three ingredients i. e. Corn flakes, whole wheat flour and wheat bran used in these rolls are rich in fibre and corn flakes also contribute to its iron content. Soft yet crunchy these delightful rolls are best if served warm as an accompaniment to your favourite salad or soup. I've used 1 teaspoon of sugar in this recipe, as it is required for the yeast to ferment which is not possible with the use of sugar substitute. Preparation Time:  30 mins Cooking Time:  20 mins Baking Temperature:  200°C (400°F).
