Pear-Cranberry Pie with Granola

                Ingredients 1  recipe prepared Perfect Pie Dough 2 1/2 pounds   mixed pears (such as Bosc and Barlett), peeled, cored, and cut into eighths 1/2 cup   dried cranberries 1/3 cup   granulated sugar 3 tablespoons   all-purpose flour 1 tablespoon   fresh lemon juice 1/4 teaspoon   freshly ground nutmeg 1/4 teaspoon   salt 1/4 cup   cranberry granola 1  large egg white 2 tablespoons   turbinado or raw sugar 2 tablespoons   honey, warmed Preparation 1. Preheat oven to 375°. Lightly flour your fingers. With one hand, bring your thumb and index finger together on the edge of the crust of the prepared dough to form small peaks all the way around. Use your other hand to stabilize the pie plate. Freeze 10 minutes or until firm. 2. Toss together pears and next 6 ingredients (through salt) in a bowl. Dark Cherry-Cranberry Compote

Yield:  serves 36 (serving size: 1 tablespoon)                  Ingredients 1 1/2 cups   fresh cranberries 1/2 cup   sweet marsala, port, or Madeira wine 2  (3-inch) strips lemon rind 1  (16-ounce) bag frozen pitted dark sweet cherries 2/3 cup   sugar 3 tablespoons   fresh lemon juice Preparation Combine first 4 ingredients in a large saucepan over medium heat; cook 10 minutes or until fruit is soft, stirring occasionally. Stir in sugar and juice. Bring to a boil; reduce heat, and simmer until thick (about 25 minutes), stirring occasionally. Discard lemon rind. Cool. Cover and chill.                               Prep Time:  10 minutes Yield:  Makes 4 servings (serving size: 1/2 cup salad and 2 boston or bibb lettuce leaves) Ingredients 2 tablespoons   low-fat mayonnaise 1 tablespoon   lemon juice 2  small (Gala or Fuji) apples, cubed 1 cup   seedless red grapes, halved 1/3 cup   dried cranberries 1/4 cup   coarsely chopped walnuts 1/4 cup   thinly sliced celery (about 1 stalk) 8  Boston or Bibb lettuce leaves Preparation 1. Combine mayonnaise and lemon juice in a medium bowl. Add apples, grapes, and cranberries; mix well. 2. Add the walnuts and celery, and mix well. Serve it on a bed of 2 lettuce leaves. Prep Time:  5 minutes Yield:  1 serving Ingredients 3 cups   mixed salad greens 1/2 cup   canned garbanzo beans, rinsed and drained 1/2 cup   shredded carrot 1/2 cup   shredded red cabbage 1 tablespoon   grated Parmesan cheese 2 tablespoons   chopped walnuts 2 tablespoons   dried cranberries 2 tablespoons   low-fat balsamic vinaigrette Preparation 1.
