Amaretto Cheesecake with Almond Brittle

Prep Time:  45 minutes Cook Time:  1 hour, 35 minutes Yield:  Makes 16 servings (serving size: 1 slice)                  Ingredients Cake: Cooking spray 1 cup   sliced almonds 1/4 cup   all-purpose flour 1 tablespoon   sugar 3 tablespoons   unsalted butter, melted 3  (8-ounce) blocks 1/3-less-fat cream cheese, softened 1  (14-ounce) can fat-free sweetened condensed milk 2 tablespoons   amaretto (almond-flavored liqueur) 1 teaspoon   vanilla extract 3  large eggs, at room temperature Brittle: 3/4 cup   sliced almonds 1 cup   sugar 2 tablespoons   water Dash of salt Preparation 1. Place a rack in middle of oven; preheat to 350°. Coat a 9-inch springform pan with cooking spray; set aside. 2. To make cake crust: Place almonds, flour, and sugar in a food processor; process until nuts are finely ground. Add butter; pulse until combined....
