                Ingredients 3 cups   cooked brown rice 2 tablespoons   lemon juice 1 pound   peeled, deveined shrimp 1 tablespoon   oil 1  seeded, sliced Thai red chile pepper 1/4 cup   chopped lemongrass 1 tablespoons   chopped ginger 1/2 cup   sliced red onion 3 tablespoons   sugar 1 1/2 tablespoons   fish sauce 1 cup   coconut water Preparation Combine 3 cups cooked brown rice with 2 tablespoons lemon juice. Cook 1 pound peeled, deveined shrimp in 2 batches in a nonstick skillet over medium heat using 1/2 tablespoon oil for each batch, until shrimp are pink, 3-4 minutes. Transfer to a plate.                Ingredients 2  zucchini 1/4 teaspoon   salt 1/4 teaspoon   freshly ground black pepper 2 ounces   sun-dried tomatoes, packed in oil (about 24) 3 ounces   goat cheese 2 tablespoons   chopped fresh chives 2 tablespoons   extra-virgin olive oil Preparation 1. Slice zucchini into 1/4-inch-thick rounds. (You should have about 24 slices.) Lay out on large platter; season with salt and pepper. 2. Dahi Tadka Tasty tempered yogurt Cooking Time:  10-15 minutes Servings:  4   Preparation Time:  5-10 minutes   Category:  Veg Ingredients   • Yogurt 2 1/2 cups • Oil 1 tablespoon • Cumin seeds 1/2 teaspoon • Green chillies 2 • Fresh coriander leaves 2 tablespoons • Ginger paste 1 teaspoon • Turmeric powder 1/4 teaspoon • Red chilli powder 1/4 teaspoon • Coriander powder 1/2 teaspoon • Curry leaves 5-6 • Salt to taste Method Heat oil in a non-stick pan and add cumin seeds. Slit green chillies and finely chop coriander leaves. Add ginger paste to the pan and sauté for a while. Add green chillies, reduce heat and add turmeric powder, red chilli powder, coriander powder and mix well. Add curry leaves, coriander leaves, salt and yogurt and switch off heat immediately. Mix well and serve immediately.

Kurmura Tadka A tasty snack made from puffed rice. Cooking Time:  5-10 minutes Servings:  4   Preparation Time:  5-10 minutes   Category:  Veg Ingredients • Puffed rice (kurmura/murmura) 4 cups • Almonds 10-12 • Green chillies 2 • Oil 2 tablespoons • Mustard seeds 1/2 teaspoon • Asafoetida a pinch • Turmeric powder 1/4 teaspoon • Curry leaves 20-25 • Chole,roasted 1/2 cup black • Salt to taste • Sugar 1 teaspoon Method Heat a large kadai. Halve the almonds and the green chillies. Pour oil into the kadai and when it is heated add mustard seeds and let them splutter. Add asafoetida, turmeric powder and sauté for ½ minute. Add curry leaves and almonds and sauté till the leaves are crisp. Add the roasted chana, salt and sugar and mix well. Add kurmura and mix well. When it is completely cooled store in airtight container.

Methi Pakora Fresh fenugreek and rice mix together with masalas to make crisp pakore. Cooking Time:  15-20 minutes Servings:  4   Preparation Time:  10-15 minutes   Category:  Veg Ingredients • Fenugreek leaves (methi),finely chopped 3 cups • Cooked rice 1 cup • Green chilli,chopped 1 • Onion ,chopped 1 medium • Salt to taste • Red chilli powder 1 teaspoon • Asafoetida a pinch • Gram flour (besan) 3 tablespoons • Oil to deep fry Method Combine together fenugreek leaves, rice, green chilli, onion, salt, red chilli powder, asafoetida and gram flour in a bowl. Mash slightly while you mix. Divide the mixture into equal portions and shape them into balls. Flatten them a bit. Heat sufficient oil in a kadai. Deep-fry the pakore, in batches of two to three, until crisp and golden. Drain on absorbent paper. Serve hot.
