Eggs mixed with vegetables, masalas, topped with cheese and chaat masala and baked.

Ingredients
Eggs3
Olive oil1 tablespoon
Onions,cubed1 cup
Red chilli powder1/4 teaspoon
Turmeric powder1/4 teaspoon
Saltto taste
Fresh coriander leaves,finely chopped1 tablespoon
Green capsicum,diced1 cup
Tomatoes,chopped2 tablespoons
Tomato basil pasta sauce4 tablespoons
Cheese,gratedfor garnish
Chaat masalato sprinkle
Method
Preheat oven to 180°C. Heat olive oil in a non stick pan, add onions and saute till translucent. Break eggs into a bowl, add red chilli powder, turmeric powder, salt and coriander leaves and whisk well.

Add capsicum, tomato, tomato basil sauce and salt to the pan and mix well. Transfer the mixture into a baking dish and pour the egg mixture over it. Sprinkle cheese and chaat masala on top. Keep the baking dish in the preheated oven and bake for 10 minutes. Serve hot.
