Southwest Breakfast Wrap

Yield:  serves 4 (serving size: 1 wrap)                    Ingredients 3/4 cup   fresh white corn kernels (about 2 ears) 2 tablespoons   finely diced green bell pepper 2 tablespoons   finely diced seeded plum tomato 1 teaspoon   minced seeded jalapeño pepper 1 tablespoon   minced fresh cilantro 1 tablespoon   fresh lime juice 1/2 teaspoon   salt, divided 4  large eggs, lightly beaten 1/4 teaspoon   ground cumin Cooking spray 2 tablespoons   finely shredded Monterey Jack cheese 4  (8-inch) flour tortillas 4  lettuce leaves Preparation Combine first 6 ingredients (through lime juice) in a small bowl; stir in 1/4 teaspoon salt.                  Aspara gus   and Chilli                   Quesadillas  Cheese Preparation Time:  10 min. Cooking Time:  10 min. Serves 3.  Ingredients 6   Flour Tortillas For the filling 4 tbsp   chopped asparagus 4 tbsp   grated cooking cheese 1   green chilli, chopped salt  to taste Method Divide the filling into three parts. Take a tortilla, put 1/3rd of the filling on it and press another tortilla on top. Repeat for the remaining tortillas and fillings. Cook on a tava (griddle) on both sides until the cheese melts. Cut each tortilla into four pieces. Serve hot.

Try using flavored wraps to jazz things up. —Jane Shapton, Irvine, California This recipe is : This recipe is: Healthy Quick Diabetic Friendly Ingredients 1 medium sweet red pepper, chopped 1 medium green pepper, chopped 2 teaspoons  canola oil 5 plum tomatoes, seeded and chopped 6 eggs 1/2 cup  soy milk 1/4 teaspoon  salt 6 flour tortillas (8 inches), warmed Directions In a large nonstick skillet, saute peppers in oil until tender. Add tomatoes; saute 1-2 minutes longer. Meanwhile, in a large bowl, whisk the eggs, soy milk and salt. Reduce heat to medium; add egg mixture to skillet. Cook and stir until eggs are completely set.
