Alfa Alfa Sprouts Open Sandwich ( Vitamin A and Calcium Rich Recipe )


The arabs call these sprouts ‘the father of all foods’! sprouts are fortified with good amounts of nutrients making it a super healthy food. This sandwich cuts down on the second slice of bread, as it is an open sandwich. Colorful peppers, olives, sprouts, tomato and cheese baked on a footlong make it an extremely tasty meal!

Makes 4 open sandwiches

Ingredients


To Be Mixed Into A Marinade


1 1/2 tbsp vinegar
1/2 tbsp olive oil
2 tsp sugar
a pinch of salt

To Be Mixed Together For The Grilled Capsicum Mixture


2 cups red , yellow and green capsicum , cut into thick stripes
1/2 tbsp olive oil
salt and powder to taste

Other Ingredients


2 whole wheat (gehun) footlong , into half horizontally
1/2 tsp olive oil
1 cup tomatoes slices
6 tbsp alfa-alfa sprout sprouts
2 tbsp black olives , deseeded and sliced
1 tsp dried oregano
1 tsp freshly ground black pepper powder
salt to taste
2 tbsp grated mozzrella cheese


Method

  1. Place a footlong on a flat dry surface and slit it into half horizontally.
  2. Core the inner side of one half of the footlong and place it on a flat dry surface with the cored side facing upwards.
  3. Brush ¼th of the marinade evenly on it and keep aside.
  4. Divide the grilled capsicum mixture into 4 equal portions and keep aside.
  5. Brush the sandwich griller with ½ tsp of olive oil, spread a portion of the grilled capsicum mixture over it and grill for 2 to 3 minutes. Keep aside to cool.
  6. Arrange ¼ cup of tomatoes, a portion of the grilled capsicum, 1½ tbsp of alfa alfa sprouts and ½ tbsp of black olives over it.
  7. Sprinkle ¼ tsp of oregano, ¼ tsp of pepper and salt evenly over it and top it with ½ tbsp of mozzarella cheese.
  8. Repeat the steps 2 to 7 to make 3 more open sandwiches.
  9. Bake it in a pre-heated oven at 200 c (400f) for 2 to 3 minutes.
