Burnt Corn Salad
Mexicans love their food smoky flavoured. This corn salad is a tasty example.

Serves 4.
Ingredients
1 cup boiled sweet corn kernels
1 white onion , sliced
1 capsicum, sliced
1 tomato, sliced
3 tsp oil
salt to taste
To be mixed into a dressing (in a bottle)
2 tbsp olive oil or salad oil
1 tbsp lemon juice
2 pinches chilli powder
a pinch of sugar
Method
- Heat 2 teaspoons of oil in a pan until it smokes.
- Add the corn kernels and go on stirring until they are slightly burnt. Remove.
- Add the remaining oil and the onion and capsicum and cook for 1 minute. Remove.
- Mix the corn kernels, onion, capsicum and tomato and salt.
- Pour the dressing on top.
- Serve immediately.
