Cabbage-Pineapple Slaw

Yield:  5 servings (serving size: 1 cup)                 Ingredients 1  (8-ounce) can pineapple tidbits in juice, undrained 3 cups   finely shredded cabbage 1 1/2 cups   chopped Red Delicious apple (about 2 medium) 1/2 cup   chopped celery 1/4 cup   golden raisins 1/4 cup   light mayonnaise Cabbage leaves (optional) Apple slices (optional) Preparation Drain pineapple, reserving 3 tablespoons juice. Combine drained pineapple, shredded cabbage, and next 3 ingredients in a large bowl. Combine reserved pineapple juice and mayonnaise; add to cabbage mixture, tossing gently. Cover and chill. To serve, spoon mixture into a cabbage leaf-lined bowl, and garnish with apple slices, if desired (cabbage leaves and apple slices not included in analysis). Spiced Apple Cider

                         Ingredients Lemon rind strips (from 1 lemon) 1 tablespoon   fresh lemon juice 1  gallon apple cider 2 tablespoons   light brown sugar 20  whole cloves 5  (3-inch) cinnamon sticks, halved 1/8 teaspoon   ground allspice 1/8 teaspoon   ground nutmeg 1/2 cup   Calvados (apple brandy) or applejack (such as Laird's) Additional cinnamon sticks (optional) Preparation 1. Bring first 8 ingredients to a boil in a large Dutch oven. Reduce heat; simmer 20 minutes. 2. Pour mixture through a sieve over a large bowl, reserving liquid; discard solids. Stir in brandy. Warm Apple and Rum Raisin Topping

                                 Ingredients 1/4 cup   rum 1/2 cup   golden raisins 1 tablespoon   butter 2  Cortland or McIntosh apples, cored and diced into 1/2-inch pieces (about 3 cups) 1/2 teaspoon   cinnamon 1 tablespoon   lemon juice vanilla ice cream or yogurt Preparation Combine 1/4 cup rum and 1/2 cup golden raisins in a small bowl; set aside. Heat a large nonstick skillet over medium heat; add 1 tablespoon butter. Sauté until melted (about 1 minute). Add 2 Cortland or McIntosh apples, cored and diced into 1/2-inch pieces (about 3 cups), 1/2 teaspoon cinnamon, and 1 tablespoon lemon juice to pan; sauté until tender (about 8 minutes). Add raisins and rum to pan; cook 1 minute. Remove from heat; cool slightly. Serve 1/4 of mixture (about 1/2 cup) over vanilla ice cream or yogurt, or on top of pancakes.

Grease a baking dish with butter. Combine butter, flour and sugar in a bowl. Rub well until the mixture resembles coarse crumbs. Arrange apple slices in the greased baking dish and sprinkle the flour mixture on them. Place the dish in the preheated oven and bake for twenty-five to thirty minutes or until golden. Remove from oven and cool to room temperature and serve.

Since both strawberry crush and vanilla ice-cream are used, there is no need to add any extra sugar for the apple smoothie. Preparation Time:  5 mins Makes 2 big glasses Ingredients 1 1/2 cups  chilled , peeled and roughly  chopped apples 5 tbsp   strawberry crush  4 tbsp  chilled fresh  curds (dahi) 1 cup   vanilla ice-cream For The Topping 4 tbsp   crushed ice Method Combine the curds, strawberry crush, vanilla ice-cream and apples and blend in a juicer till the mixture is smooth and frothy.
