Cantaloupe Soup with Mint Prep Time:  15 minutes Total Time:  2 hours Yield:  Serves: 4 (serving size: 1 cup) Ingredients 1  large cantaloupe (about 3 lb.) 1/4 cup   honey 1/2 cup   orange juice 1 1/2 tablespoons   finely chopped fresh mint, plus small sprigs for garnish, optional Preparation 1. Halve melon, scoop out seeds and remove rind. Cut flesh into large chunks. (You should have about 6 cups.) 2. Working in batches if necessary, combine cantaloupe, honey and orange juice in a blender. Pulse or blend until smooth. Transfer to a large bowl, cover and refrigerate until thoroughly chilled, at least 2 hours. 3. Just before serving, briskly whisk soup and stir in mint.                           Ingredients 1  ripe peach, peeled, pitted, diced 1  medium yellow or orange tomato, cored, cut into 1/2-inch pieces 1 tablespoon   chopped fresh mint leaves 1 tablespoon   chopped fresh cilantro 1/4 cup   chopped sweet onion such as Vidalia 1 tablespoon   lime juice, plus more to taste 1 teaspoon   minced, seeded jalapeño, plus more to taste 1/4 teaspoon   kosher salt, plus more to taste Preparation Toss all ingredients in a bowl. Season to taste with additional lime juice, jalapeño or salt, if desired. Serve salsa with tortilla chips, or spoon onto grilled chicken or fish.

     Marinated Feta and Olive Skewers                     Ingredients 2 teaspoons   fennel seeds 2 teaspoons   orange zest 3 tablespoons   fresh orange juice 1 teaspoon   freshly ground black pepper 4 ounces   feta cheese, cut into 24 (1/2-inch) cubes 24  (6-inch) wooden skewers 24  fresh mint leaves 12  pitted green olives, halved 1/4  large English cucumber, seeded and cut into 1/2-inch chunks Preparation 1. Combine fennel seeds, orange zest and juice, and pepper. Gently stir in the feta and marinate for 1 hour at room temperature or up to 3 hours in the refrigerator.                          Sangria                               Ingredients 1/2 pound   fresh strawberries, sliced 1  each peach, orange, lime, all thinly sliced 2 cups   red wine 1 ounce   cherry liqueur 1 cup   club soda Preparation Place fruit in a large, chilled glass pitcher. Add wine and liqueur; stir. Cover and refrigerate for 12 hours. Remove from fridge, and add club soda; stir. Fill 4 glasses halfway with ice cubes; add sangria. Garnish with lime wedge, strawberry, and a mint leaf.

This unusual combination of fruits is rich in potassium, vitamin C and fibre. Tangerine and Carrot Cooler Serves 4 2 pound carrots, peeled and cut into dices 2 tablespoons honey 1/4 teaspoon grated nutmeg 1/2 gallon fresh tangerine juice 1 cup  ice cubes 1 orange, cut into 6 slices for garnish, cut from one side In a blender, blend together all the ingredients. Citrus fruits and almonds are widely grown and of course largely consumed in sicily, which is an island in the mediterranean region. I actually ate up a large chunk of this cake the first time i made it. So if you are the one who loves hot freshly baked cakes, you will love this delicious tea-time cake flavoured with orange and almonds.
