Yield:  serves 36 (serving size: 1 tablespoon)                  Ingredients 1 1/2 cups   fresh cranberries 1/2 cup   sweet marsala, port, or Madeira wine 2  (3-inch) strips lemon rind 1  (16-ounce) bag frozen pitted dark sweet cherries 2/3 cup   sugar 3 tablespoons   fresh lemon juice Preparation Combine first 4 ingredients in a large saucepan over medium heat; cook 10 minutes or until fruit is soft, stirring occasionally. Stir in sugar and juice. Bring to a boil; reduce heat, and simmer until thick (about 25 minutes), stirring occasionally. Discard lemon rind. Cool. Cover and chill. Yield:  About 13 cups (serving size: 1 cup)                    Ingredients Lemon rind strips (from 1 lemon) 1 tablespoon   fresh lemon juice 1  gallon apple cider 2 tablespoons   light brown sugar 20  whole cloves 5  (3-inch) cinnamon sticks, halved 1/8 teaspoon   ground allspice 1/8 teaspoon   ground nutmeg 1/2 cup   Calvados (apple brandy) or applejack (such as Laird's) Additional cinnamon sticks (optional) Preparation 1. Bring first 8 ingredients to a boil in a large Dutch oven. Reduce heat; simmer 20 minutes. 2. Pour mixture through a sieve over a large bowl, reserving liquid; discard solids. Stir in brandy. Almond Biscotti with Cappuccino The name biscotti is derived from 'bis' meaning twice in Italian and 'cotto' meaning baked or cooked. Our recipe is a quick version of the traditional one where the sticky dough is first shaped into a 12 inch (30 cm) log and baked until firm. After a short cooling period, the log is sliced into diagonal slices and baked again to draw out the moisture thus producing crisp, dry textured cookies that have a long shelf life.
