Corn Chowder With Crab and Cilantro

Ingredients 4  bacon slices (uncooked) 1 cup   chopped onion 1/2 cup   chopped celery 1/2 teaspoon   chopped fresh thyme 2 1/2 cups   2% reduced-fat milk 1/4 cup   flour 2  (14.5 ounce) cans fat-free, reduced-sodium chicken broth 1 pound   red potatoes, diced (about 1/4-inch) 1 1/2 cups   corn kernels (fresh or frozen) 1 pound   lump crabmeat, shell pieces removed 2 tablespoons   chopped fresh cilantro 1 tablespoon   lime juice 1/2 teaspoon   kosher salt Preparation 1. Pasta with Bacon, Squash and Sage

Prep Time:  18 minutes Cook Time:  30 minutes Yield:  Serves: 6 (serving size: about 1 cup pasta, 2/3 cup squash)                   Ingredients 1  2-lb. squash (such as butternut or kabocha) 2 tablespoons   olive oil Salt and freshly ground black pepper 4 ounces   thick-sliced bacon, chopped into 1/2-inch pieces 1/2 teaspoon   crushed red pepper 3 tablespoons   sliced sage leaves 12 ounces   medium whole-grain shell-shaped pasta 1 tablespoon   lemon juice Preparation 1. Yield:  2 servings (serving size: 1 potato)                  Ingredients 2  medium sweet potatoes (8 to 10 ounces each) 3 ounces   Canadian bacon, diced 2 tablespoons   reduced-fat sour cream 3 teaspoons   chopped fresh chives 2 tablespoons   shredded reduced-fat sharp cheddar cheese Preparation Pierce potatoes with a fork, and arrange on paper towels. Microwave on high 8 minutes; turn potatoes over after 4 minutes. Cut each potato in half lengthwise, and scoop out the pulp, leaving 1/4-inch-thick shells. Mash pulp with 3 ounces Canadian bacon, 2 tablespoons sour cream, and 2 teaspoons chives in a bowl. Spoon mixture into shells. Sprinkle 2 tablespoons cheese over tops of potatoes.
