Yield:  9 servings (serving size: 1 square)                   Ingredients 1  (6 1/2-ounce) package sugar-free chocolate sandwich cookies, crushed 1/3 cup   chopped pecans 3 tablespoons   reduced-calorie margarine, melted 1  quart vanilla no-sugar-added, fat-free ice cream, softened Preparation Combine first 3 ingredients; reserve 1 cup mixture. Press remaining crumb mixture firmly in bottom of a 9-inch square pan. Freeze 10 minutes. Spread ice cream over crumb mixture in pan. Sprinkle reserved crumb mixture over ice cream; gently press mixture into ice cream. Cover and freeze at least 8 hours. To serve, let stand at room temperature 5 minutes; cut into 9 squares. Prep Time:  20 minutes Cook Time:  12 minutes Yield:  Makes 28–32 cookies (serving size: 1 cookie)                   Ingredients 1  (16.5-ounce) package refrigerated sugar cookie dough 1/4 cup   packed light brown sugar 1/4 cup   finely chopped pecans 3/4 teaspoon   ground cinnamon 1/4 teaspoon   ground nutmeg (optional) Preparation Preheat oven to 350°; place rack in center of oven. Freeze sugar cookie dough 1 hour. Remove from freezer, and place on cutting board. Cut dough into 1/4-inch slices (about 28–32 slices); arrange 2 inches apart on 2 parchment paper–lined baking sheets. Yield:  Makes 6 servings (serving size: 1 cup)                   Ingredients 8 ounces   egg noodles made for Passover 1/4 cup   butter 2  medium sweet potatoes (1 1/4 pounds), peeled and grated (about 4 cups) 2  large eggs 2  large egg whites 1/2 cup   reduced-fat sour cream 1/2 cup   apricot jam 1 teaspoon   salt 1/4 cup   chopped pecans, toasted Preparation 1. Preheat oven to 350°. 2. Cook noodles according to package directions; drain and rinse with cold water. Drain again, and set aside. 3. Meanwhile, melt butter in a large nonstick skillet over medium heat. Add the sweet potatoes; sauté until tender, 8 minutes. Let cool 5 minutes. 4. Beat together eggs and egg whites in a large bowl. Yield:  Makes 4 servings (serving size: 1/2 cup)                  Ingredients 1/4 cup   chopped pecans 6 tablespoons   maple syrup 1/4 teaspoon   orange zest 1  cinnamon stick 1/4 teaspoon   ground cloves 2  large sweet potatoes, baked Preparation 1. Preheat oven to 300°. 2. Place the pecans in a single layer on a baking sheet. Bake about 10 minutes or until pecans are fragrant and begin to darken. Remove from oven, and set aside. 3. In a small saucepan, combine maple syrup, orange zest, cinnamon stick, and ground cloves. Bring to a gentle simmer. Remove from heat, and let stand about 5 minutes. 4.
