Cabbage-Pineapple Slaw

Yield:  5 servings (serving size: 1 cup)                 Ingredients 1  (8-ounce) can pineapple tidbits in juice, undrained 3 cups   finely shredded cabbage 1 1/2 cups   chopped Red Delicious apple (about 2 medium) 1/2 cup   chopped celery 1/4 cup   golden raisins 1/4 cup   light mayonnaise Cabbage leaves (optional) Apple slices (optional) Preparation Drain pineapple, reserving 3 tablespoons juice. Combine drained pineapple, shredded cabbage, and next 3 ingredients in a large bowl. Combine reserved pineapple juice and mayonnaise; add to cabbage mixture, tossing gently. Cover and chill. To serve, spoon mixture into a cabbage leaf-lined bowl, and garnish with apple slices, if desired (cabbage leaves and apple slices not included in analysis).              Ingredients 3 tablespoons   fresh lime juice 3 tablespoons   rice vinegar 2 tablespoons   fish sauce 1 tablespoon   water 1 tablespoon   creamy peanut butter 1 teaspoon   chile paste with garlic 1  garlic clove, minced 6 cups   shredded napa (Chinese) cabbage 2 cups   shredded red cabbage 1 cup   red bell pepper strips 1 cup   shredded carrot 2 tablespoons   chopped dry-roasted peanuts 1 tablespoon   chopped fresh cilantro 1 tablespoon   chopped fresh mint Preparation Combine first 7 ingredients in a large bowl, stirring with a whisk until blended. Add cabbages, bell pepper, and carrot, and toss gently to coat. Cover and marinate in refrigerator 1 hour. Stir in the peanuts, cilantro, and mint just before serving. Cabbage Soup Cabbage takes the center stage in this tasty vegetable soup. Cooking Time:  10-15 minutes Servings:  4   Preparation Time:  10-15 minutes   Category:  Veg Ingredients • Cabbage,shredded 1 medium • Olive oil 1 1/2 tablespoons • Onion ,diced 1 medium • Garlic,chopped 4 cloves • Ginger,chopped 1 inch • Leek,chopped 2 • Potato,Boiled, peeled And Grated 1 medium • Vegetable stock 3 cups • Salt to taste • Black pepper powder to taste Method Heat oil in a deep non-stick pan, add onion, garlic, ginger, leeks, potato and sauté for three to four minutes. Add cabbage, mix well and cook for five minutes. Add vegetable stock and wine, mix well and simmer for ten to fifteen minutes. Add salt and black pepper powder, mix well and cook for a minute. Serve piping hot.

No, its not Chinese but close :) Its Indo-Chinese and every Indian out there is utterly, shamelessly biased about this. Trust me :). We will argue to the point of going red in the face that this is what Chinese food is all about - err, well at least I did something similar in the beginning of my culinary journey beyond Indian boundaries. And this rice is where it all begins. The protein additions, that I specify in the recipe below, are practically unknown back in India (except the meal maker and that's not added in this rice). But given that I do, to add some nutrition to this rice, I thought I will mention it for the health loving foodies who also enjoy eating all kinds of food.
