Black Bean and Poblano Tortilla Wraps

Yield:  4 servings (serving size: 1 wrap and 2 tablespoons sour cream mixture)               Ingredients 1/2 cup   reduced-fat sour cream 1/2 teaspoon   ground cumin 1  (15-ounce) can black beans, rinsed and drained 1 cup   ripe diced peeled avocado (about 1) 1/2  poblano chile, finely chopped (about 1/3 cup) 1/4 cup   finely chopped red onion 1/4 cup   chopped fresh cilantro leaves 3 tablespoons   fresh lime juice (about 1 large lime) 1/4 teaspoon   salt 4  (8-inch) flour tortillas Preparation Combine sour cream and cumin in a small bowl; stir with a whisk.                         Ingredients 1/3 cup   lime juice 2 tablespoons   fish sauce 2 tablespoons   sugar 1/4 cup   chopped fresh mint, divided 1 pound   flank steak, trimmed 1/2 cup   shredded carrot 1 cup   thinly sliced red onion 1  small cucumber, peeled, halved lengthwise and thinly sliced 1  cup red bell pepper, cut into strips 1/2  minced jalapeño pepper 1/4 cup   coarsely chopped unsalted, dry-roasted peanuts 4 cups   trimmed watercress or arugula Preparation 1.                 Ingredients 3 cups   cooked brown rice 2 tablespoons   lemon juice 1 pound   peeled, deveined shrimp 1 tablespoon   oil 1  seeded, sliced Thai red chile pepper 1/4 cup   chopped lemongrass 1 tablespoons   chopped ginger 1/2 cup   sliced red onion 3 tablespoons   sugar 1 1/2 tablespoons   fish sauce 1 cup   coconut water Preparation Combine 3 cups cooked brown rice with 2 tablespoons lemon juice.                Ingredients 4 ounces   uncooked angel hair pasta 2 cups   fresh snow pea pods Cooking spray 1/2 cup   diced red onion 1  (2-ounce) jar sliced pimiento, drained 1/3 cup   low-fat sour cream 3 tablespoons   dry white wine or low-sodium chicken broth 2 tablespoons   Dijon mustard Preparation Cook pasta according to package directions, omitting salt and fat. Drain and set aside. Wash peas; trim ends, and remove strings. Cook, uncovered, in a small amount of boiling water 3 minutes. Drain; set aside.
