Broccoli & Feta Omelet with Toast

               Ingredients Cooking spray 1 cup   chopped broccoli 2  large eggs, beaten 2 tablespoons   feta cheese, crumbled 1/4 teaspoon   dried dill 2  slices rye bread, toasted Preparation 1. Heat a nonstick skillet over medium heat. Coat pan with cooking spray. Add broccoli, and cook 3 minutes. 2. Combine egg, feta, and dill in a small bowl. Add egg mixture to pan. Cook 3 to 4 minutes; flip omelet and cook 2 minutes or until cooked through. Serve with toast.

                 Ingredients 1/2 cup   Hellmann's® or Best Foods® Mayonnaise Dressing with Olive Oil, divided 1/4 cup   chopped fresh basil leaves 2 tablespoons   finely chopped oil-cured black olives 8  slices rustic whole grain bread (about 1/2-inch thick) 1  small zucchini, thinly sliced 4  slices provolone cheese 1  jar (7 oz.) roasted red peppers, drained and sliced Preparation 1. Combine 1/4 cup Hellmann's® or Best Foods® Mayonnaise Dressing with Olive Oil, basil with olives in small bowl. Evenly spread bread slices with mayonnaise mixture, then layer 4 bread slices with zucchini, provolone, peppers and bacon. Top with remaining 4 bread slices. 2.                                Ingredients 4  slices crusty bread 1/2 cup   part-skim ricotta cheese 1/4 cup   cherry tomato halves Extra-virgin olive oil Salt and freshly ground black pepper to taste Preparation Lightly toast bread. Spread each toast slice with 2 tablespoons ricotta. Scatter cherry tomato halves over the ricotta. Breakfast Special - Easy French toasts with strawberries Serves 2 2 big slices of stale white bread 2 medium eggs 1/4 cup milk pinch of salt 1 teaspoon sugar pinch of ground cinnamon 1 tablespoon unsalted butter 2 tablespoon powdered sugar 4 to 6 fresh strawberries, cut into half In a shallow dish lightly whisk together the eggs, milk, salt, sugar, and cinnamon. Meanwhile, ask Mommy to heat up a skillet over medium heat. Melt half the butter in the pan. Dip a slice of bread in the egg mixture for 3 to 4 seconds and flip it on to the pan. If you soak the bread for long, it will become soggy and will be very difficult to make the perfect French toast. Once you have dipped and covered the bread in the egg mixture ask Mommy to cook the bread on the pan until each side until it's crispy and brown, about 4 to 5 minutes.
