Gatte Aur Tomato Ka Pulao

Ingredients
Gatte
Gram flour (besan)1 cup
Yogurt2 tablespoons
Saltto taste
Baking sodaa pinch
Ginger,chopped1/2 teaspoon
Red chilli powder1/4 teaspoon
Garam masala powder1/4 teaspoon
Asafoetidaa pinch
Ghee1 tablespoon
Fresh mint leavesa few
Pulao
Tomato,chopped1 medium
Basmati rice,soaked1 1/2 cups
Ghee3 teaspoons
Cinnamon2 stick
Green cardamoms3-4
Black cardamom1
Cloves3-4
Cumin seeds1 teaspoon
Bay leaf1
Ginger1 inch piece
Garlic3-4 cloves
Coriander powder2 tablespoons
Red chilli powder2 tablespoons
Turmeric powder1/4 teaspoon
Method
To make gatte, place gram flour in a bowl, add yogurt, salt, baking soda, ginger, red chilli powder, garam masala powder and asafoetida. Add 1 tbsp ghee and mix.

Chop few mint leaves and add and mix well. Add sufficient water and knead into a stiff dough. Divide into equal portions and roll each portion into cylinders.

Boil sufficient water in a deep non stick pan, put the cylinders into the pan and cook till they rise to the top. Drain well. Cool and cut into small pieces.

Heat 3 tsps ghee in another deep non stick pan. Add cinnamon, green cardamoms, black cardamom, cloves, cumin seeds and bay leaf and saute till fragrant.Meanwhile put ginger, garlic and tomato into a jar and crush with a hand blender.

Add the gatte to the pan and saute for 2 minutes. Add ginger-garlic-tomato mixture and mix. Add coriander powder, red chilli powder, salt, turmeric powder and saute for a minute.

Drain rice and add to the pan and mix well. Rinse the jar with ½ cup water and put into the pan. Add 2½ cups water and mix. When the water comes to a boil, cover the pan, reduce heat and cook till the rice is done. Serve hot.
