Eggs mixed with vegetables, masalas, topped with cheese and chaat masala and baked.
Ingredients
• | Eggs | 3 |
• | Olive oil | 1 tablespoon |
• | Onions,cubed | 1 cup |
• | Red chilli powder | 1/4 teaspoon |
• | Turmeric powder | 1/4 teaspoon |
• | Salt | to taste |
• | Fresh coriander leaves,finely chopped | 1 tablespoon |
• | Green capsicum,diced | 1 cup |
• | Tomatoes,chopped | 2 tablespoons |
• | Tomato basil pasta sauce | 4 tablespoons |
• | Cheese,grated | for garnish |
• | Chaat masala | to sprinkle |
Method
Preheat oven to 180°C. Heat olive oil in a non stick pan, add onions and saute till translucent. Break eggs into a bowl, add red chilli powder, turmeric powder, salt and coriander leaves and whisk well.
Add capsicum, tomato, tomato basil sauce and salt to the pan and mix well. Transfer the mixture into a baking dish and pour the egg mixture over it. Sprinkle cheese and chaat masala on top. Keep the baking dish in the preheated oven and bake for 10 minutes. Serve hot.
